Recipe: Livewell Sofrito
Ingredients
- 1 medium onion, sliced into chunks
- 1 head garlic cloves, peeled
- 1 red bell pepper, sliced into chunks
- 1 green bell pepper, sliced into chunks
- 1 Yellow Bell pepper
- 2 Cubanelle peppers
- 4 green onions, white and green parts, sliced
- 1 cup cilantro, packed, stems and leaves
- ½ tsp of cumin
- ½ tsp oregano
- 1 tsp Paprika
- Juice from 1 lime
- 1 tsp Vinegar
- 1 pinch of Sea Salt
Instructions
Place all ingredients in a food processor. Pulse until a chunky sauce forms. Store in an airtight container in the fridge until ready to use. Good for 1 week. You can freeze it to last longer as well. Enjoy.
